Chris Mitchell was twenty-six when he used Prince's Trust funding to open Cork & Cask on Marchmont Road in 2013, betting that the area's students and young families wanted wine beyond supermarket brands. India Parry-Williams joined the following year and Jamie Dawson completed the current team in 2019. The shop divides its shelves roughly evenly between wine, beer and spirits, with a strong lean towards organic and biodynamic bottles bought directly from small importers rather than large distributors. Around two hundred and seventy organic and biodynamic wines sit alongside ciders, perries and own-label whiskies, plus a rotating cast of Scottish and English craft beers. Cork & Cask also supplies restaurants and bars across the city through a separate wholesale arm, and ships nationally through its website.
