Ian Chatfield has traded as a butcher on Tonbridge High Street since 1972, one of the town's longest-standing independent food shops. The counter runs to beef, pork, lamb, poultry and game alongside dry-aged and traditionally hung cuts, built on decades of relationships with the same local farms. The shop's own Easy As Pie range of pies, pasties and Scotch eggs is made by hand on the premises rather than bought in, and the butchers cut and prepare orders to a customer's own specification rather than working only from what is on display. Alongside the counter trade, the shop now despatches meat nationwide with next-day delivery, though the High Street shop remains the core of the business, staffed by butchers trained in traditional preparation rather than pre-packed supply chains.
