Aaron continues the family trade with his own approach to the recipes, serving coffee alongside the baked goods for people eating in or taking away. The shop opens early to catch the breakfast trade before settling into a steady lunchtime rhythm of sandwiches and salads made from the morning's bread. Its position on the main road through Kentish Town puts it among a run of independent food shops rather than chain outlets. The ovens work through the morning, with fresh batches replacing what sells out.
