Cristina Wood started baking sourdough at home during the 2020 lockdown after her sister in Germany suggested she try it; friends began sharing photos of her loaves online and orders followed. She baked at night while still working in the oil and gas sector, then supplied local businesses such as Briggsy's butcher before opening her own bakery, first in Jedburgh and now at Woodmarket in Kelso. The shop produces organic sourdough loaves in flavours such as brie and cranberry or black sesame with pistachio, alongside French pastries baked in a kitchen above the café. She also teaches sourdough-making courses for people wanting to learn the process she taught herself.
