Scott Goss opened Verdigris on Tonbridge High Street at the end of 2018, his first solo restaurant after several years as creative director of the I'll Be Mother group, where he oversaw menus at The Beacon in Tunbridge Wells and launched The Twenty Six in Southborough. The cocktail bar opened first, in September, with the kitchen following in December, on the site of the former Graze Kitchen and Bar, itself once The Castle pub. The dining room and fifty-cover terrace look directly over the River Medway to Tonbridge Castle, and the kitchen bakes its own bread and pastries in house. The menu draws on modern European cooking with produce from the restaurant's own garden, neighbouring farms and friends' allotments, served alongside a cocktail and wine list built around the bar.
