Bruce Brymer is a family butcher on St David Street in Brechin, established in 1986 by Bruce and Valerie Brymer and now run with their son Gavin. What began as a fishmonger's was rebuilt into a butcher's workshop with an onsite bakery and kitchens, so the shop turns out pies, sausages and cooked meats alongside its counter of fresh beef, lamb and pork. Sourcing draws on farms around Angus and the Mearns. The shop trades Tuesday to Saturday, closing Sunday and Monday, and remains a single independent premises rather than part of a wider butchery chain. It is a working example of a small-town butcher that has kept its own bakery and production alive rather than buying in ready-made lines.
