George Mewes opened his cheesemonger's on Byres Road in Glasgow's West End in 2010, and runs it on a simple principle: every cheese on the counter has been tasted and chosen by him. The result is one of Scotland's best cheese shops — farmhouse and artisan cheeses kept and sold with real knowledge, named UK Cheese Counter of the Year at the World Cheese Awards in 2014. A second shop followed in Edinburgh, but the operation stays small and personal, which is the whole point of a proper cheesemonger. Ask what is good today; you will get an honest answer and, probably, a taste.
