John Corfield, formerly a chef at the Ritz and at a Gordon Ramsay restaurant in London, set up the Isle of Skye Smokehouse at Ard Dorch, near Broadford, incorporating the business in 2016. The smokehouse building is modelled on a traditional Scottish cleit, with a peat roof and stone walls, and Corfield hot-smokes Atlantic salmon over oak in small batches. Tour and tasting sessions are booked through Airbnb Experiences, and Corfield leads visitors through the curing and smoking process himself before a tasting of the finished salmon. The smokehouse sits close to Broadford, within the Gaelic-speaking crofting townships of south Skye (An t-Eilean Sgitheanach), on the route toward Elgol.
