Robbie Gray opened Canary Girl on Cathcart Road after working as a barista at Cafe Strange Brew in Shawlands, naming the shop for his great-grandmother Georgina, who worked at the Singer factory in Clydebank making munitions during the Second World War and was nicknamed a Canary Girl for the yellow tinge TNT left on her skin. Gray roasts and grinds coffee on site, working directly with a Guatemalan grower named Javier rather than through a wholesaler. The counter serves espresso, filter coffee, teas and juices alongside pastries, with beans also sold by the bag to take home. The shop is small, with limited seating, and trade leans heavily on takeaway custom from passing Cathcart Road footfall.
