Fairfax Distillery

Fairfax Distillery operates from a converted room inside Ye Old Sun Inn in Colton, near Tadcaster, run by Ashley and Kelly McCarthy, who have owned the pub for about twenty years and moved distilling equipment into the building in 2022. The stills produce small-batch gins, a botanical vodka and barrel-aged spiced rums, alongside handmade chocolates sold in the inn's shop.
