Dan Smith opened Roasters on Paisley High Street in 2021 after years working in hospitality, including stints at Saporito and Jam Jar. He fitted out the premises himself over roughly four months and owns everything on the premises outright. Trade was slow through the first winter, then picked up sharply from February 2022, and the café now serves large numbers of covers on a typical weekend without ever paying for advertising, growing entirely through word of mouth. The menu runs to cooked breakfasts, toasted sandwiches, savoury waffles, burgers and daily traybakes alongside espresso-based coffee, and the room stays busy from opening to close. Smith has talked about a second site but for now Roasters remains a single, owner-run café on the same stretch of High Street where it began.
