Steve Dyson and Tracey Peck opened Spring Espresso on Fossgate in 2011, having spent the previous years selling coffee from a red van around York before deciding to open a permanent counter. The shop is widely credited as York's first dedicated speciality coffee shop, serving a rotating guest espresso alongside a mainstay blend and a seasonal food menu of brunch and lunch dishes. A second site later opened at Lendal, but Fossgate remains the original and the busier of the two, with communal tables and a steady flow of regulars working through flat whites and toasted sandwiches. The pair still run the business day to day, and the seasonal menu changes through the year. Open daily from eight in the morning.
