Stevie Higginson opened Square Bistro with his wife Cristina in 2006, and the couple still run the pass and the floor at 18 Lisburn Square. The menu reads as an Irish bistro with occasional Far Eastern turns, leaning on a short list of named suppliers: Peter Hannan for beef, Walter Ewing for seafood, Abernethy for butter. Steaks are the thing people order twice. The room seats a modest number of covers around an open kitchen, with service Tuesday to Saturday only, lunch from 11.30am and dinner from 5pm, last orders pushed to 9pm on Fridays and Saturdays. Closed Sunday and Monday, rather than trading every day of the week. Georgina Campbell's Guides have listed it among Northern Ireland's stronger bistros, and it remains a single-site business rather than part of any wider group.
