Caws Teifi is the oldest artisan cheesemaker in Wales — John and Patrice Savage-Onstwedder, who came from the Netherlands, started making cheese at Glynhynod Farm on the Teifi in 1982, using raw organic milk and, for their flagship, a Gouda recipe some five hundred years old. It is Soil Association organic and a Great Taste Golden Fork winner, still a single-family farm operation, with a farm shop where you can buy the cheese and, by arrangement, taste it. In the wooded Teifi valley on the Ceredigion–Carmarthenshire border, it is a producer worth seeking out. Buy the aged Teifi; it is the one that made the name.
