Holly and Alex Kragiopoulos founded North Star in Leeds in 2013 and built it into one of the north's most respected speciality roasters — a B Corp-certified, founder-owned business that roasts on Tong Road, trains baristas, and pours its coffee from small café kiosks around the city. It has grown without taking outside money, on the strength of the roast and a clear set of values. A new flagship café and bakery is opening in the city centre in 2026.
