Nick Birchall spent more than twenty years working directly with cheesemakers before opening this shop with Chris Hogan in 2020, on Hospital Street in a building that survived the great fire of Nantwich in 1583 — in the county that named a cheese. The range runs past a hundred and fifty artisan cheeses in season, matured in the shop's own cellar below, and the trade press has noticed: Speciality Food named it among its inspirational cheese retailers for 2025. Open seven days, from half past eight most mornings, which is early for cheese and correct for a market town.
