Harry and Phoebe Baines took over the Gillygate cheese shop in September 2015 and built its reputation; Jordan Thomson, who joined the counter in 2020 and rose to manage it, bought the business from them in a management buyout completed in late 2022 — the succession every good shop hopes for, staff to steward, told here because the shop's own About page hasn't caught up with it. The counter does the mongering, the hampers do the gifting, and the Speakcheesey — a café-bar in the secret garden out back, with the Minster's towers over the wall — does the lingering, toasties and tasting boards until eight on weekend nights.
