Daniel Hatton won a Michelin star in 2012 running Thackeray's up the hill, having started there at sixteen and passed through Marco Pierre White's and Gordon Ramsay's kitchens on the way; in 2016 he and his wife Lisa — sixteen years of Laura Ashley behind her — opened Hattons on the Pantiles instead, trading the tasting menu for a café-deli where the cooking pedigree hides in the sausage rolls.
