Peter Heanen took over an existing shop trading as HG Walter in 1972 and kept the name, running the Barons Court counter with his wife and parents before his four children, Adam, Daniel, Louise and Clare, took over day-to-day running. Beef hangs for twenty-eight to ninety days in a Himalayan salt-lined dry-ageing room, and the shop makes its own pies, scotch eggs, burgers and sausages on site. Restaurant trade now accounts for most of the business, with kitchens including Quo Vadis and The Fat Duck among its accounts, but the original shop opposite Barons Court tube station still serves walk-in customers six days a week.
