Moonwake Beer Co. brews on Tower Street in Leith, founded by Vinny Rosario and Fin Heslop, who met working together at XT Brewery in Buckinghamshire after Rosario trained under Sean Knight at Sambrooks in London and later brewed at Garage Beer Co in Barcelona. The brewery opened in January 2020 and began selling beer commercially from June 2021, running a 35-hectolitre kit beneath a mezzanine taproom that looks down over the brewhouse through a geometric mural. Core beers include a New Zealand pale ale, a West Coast IPA and a milk stout, alongside rotating styles such as weissbier, gose and kolsch. Their Leith Helles lager won gold at the SIBA Regional Indie Beer Awards in 2025. The taproom is card-only and dog-friendly, with a strict no-nuts policy throughout.
