Persie Distillery occupies the former Persie Hotel at Auchenflower on the A93, seven miles north of Blairgowrie at the foot of Glenshee. Simon and Chrissie Fairclough bought the derelict steading in 2014 and converted it into a working gin distillery, opening to the public in 2016. Production runs on a 230-litre hybrid still commissioned from a manufacturer in Germany's Black Forest, nicknamed Phil the Still, using water drawn from a bore hole in the surrounding hills. The distillery runs guided tours with tastings of six gins, plus free drop-in tastings without booking. A recurring range of charity bottlings has raised roughly twenty-five thousand pounds for the Perthshire Abandoned Dogs Society. The shop and tasting room open Thursday to Sunday through the winter and six days a week from March to December, closed Wednesdays. It remains independently owned by the Faircloughs.
